Thank you so much to Naomi Potvin for sending in recipes for this column. I am going to use your Can’t Fail Fudge recipe and add a drink recipe in the spirit of the New Year’s holiday. Something for everyone and something for just the adults. I consider myself an adult since I don’t have to eat at the kid table anymore at Christmas.
My fiance and I were out to eat at Applebee’s last weekend finishing up Christmas shopping. The server was very polite and nice, she asked us what we wanted to drink and offered us their Perfect margaritas, which I usually have because they are delicious! But I replied, “Coffee and water, please.” “OK, sorry, we are out of coffee, I think,” she answered. So I said, “OK, give me the Perfect.”
She asked if I wanted any different flavors and I told her no, thanks, just the regular.
So when she brought out the drink that was a cheerful holiday red strawberry margarita with red sprinkles instead of salt, I was thinking, “OK.” LOL. And I tried it and it was just great. I never would have ordered this drink myself or realized how much I would like it. I’m not one to complain to any customer service worker because I was that server for a long time and I think you can learn a lot from people based on the way they treat servers. There’s only been one time in my life I didn’t leave a tip and I still regret it, I can remember exactly where I was! But do you think I can remember why I didn’t leave one? Nope. Lesson learned.
Can’t Fail Fudge | Naomi Potvin
4 cups mini marshmallows
2/3 cup evaporated milk
1-1/2 cups sugar
1/4 cup butter
1-1/2 teaspoon salt
Cook until mixture comes to full boil. Boil 5 minutes, stirring constantly, remove from heat. Add 12 ounces of chocolate chips and beat until melted. Pour in a buttered 9-inch pan and let set.
Strawberry Perfect Margarita | Applebee’s inspired
1-1/4 ounce Cuervo 1800 tequila
3/4 ounce Cointreau
3/4 ounce Grand Marnier
1 ounce freshly squeezed lime juice
4 ounces sweet-and-sour mix
1/2 ounce simple syrup
Strawberry puree (frozen or fresh strawberries)
Garnish with lime wedge and sugar sprinkles or salt.
Chill a margarita glass. Salt the rim if desired by rubbing the rim with a wedge of lime, then inverting the glass onto a plate of coarse salt, or you can use sugar. Muddle the strawberries in the bottom of a cocktail shaker with sugar until the berries are almost completely liquified.
Combine the tequila, Cointreau, Grand Marnier, lime juice, sour mix and simple syrup in a shaker with some ice. Shake well to combine. Strain into the chilled glass. Garnish.
